TÜBİTAK Project Achievement of Dr. Berna Öztürk

Dr. Berna Öztürk, Vice Dean of the Faculty of Art and Design at Istanbul Nişantaşı University, has been awarded funding under the TÜBİTAK 1002-A Rapid Grant Program for her project titled:
“Production of Miso Using Non-Traditional Legumes (Black-Eyed Peas, Mung Beans, and Black Chickpeas), Identification of Microorganisms Involved in Fermentation, and Evaluation of the Quality Characteristics of the Final Product.”

The project aims to make significant scientific contributions to the food industry by focusing on fermented and functional foods, which are among the priority research areas both in Turkey and globaly. In alignment with Turkey’s 12th Development Plan, which emphasizes sufficient and balanced nutrition, production in line with supply-demand equilibrium, increased international competitiveness, and high-efficiency food production, the study also intends to introduce new cereal-originated microorganisms as starter cultures to the food industry.

The outcomes of the research are expected to be of great importance, particularly in terms of their potential positive effects on human health.
